Coconut Poke Cake
INGREDIENTS:
1 (18.25 ounce) package white cake mix
1 (14 ounce) can cream of coconut (usually found in the liquor section of the grocery store)
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package flaked coconut
1 (16 ounce) whipped topping OR REAL whipped cream
DIRECTIONS:
1. Prepare and bake white cake mix according to package directions. Use a 9x13 pan.
2. Mix cream of coconut and sweetened condensed milk together.
3. Remove cake from oven. While still hot, use the handle of a wooden spoon or chopstick to poke holes all over the top of the cake. Pour cream of coconut/sweetened condensed milk mixture over the top of the hot cake.
4. Let the cake cool in the fridge overnight.
3. Once cake has cooled, frost with the whipped cream/topping and top with the flaked coconut. Keep cake refrigerated.
FYI: This cake is the consistency of coconut cream pie!

What is cream of coconut? Coconut milk?
Cream of cocnut is not coconut milk. It is a thick cream found with other mixers in the liquor asile of the grocery store.
I make basically the same wonderful cake, but just bake the white cake per instructions and while warm, poke the holes and USE ONLY THE CREAM OF COCONUT, 14 OR 15 OUNCE CAN. (NOT THE EAGLE BRAND MILK) since I love coconut, I use coconut flavoring in the cool whip or whipped cream.
It is a huge hit. and light eating!

I make a cake similar to this, I use chocolate cake mix and crushed almonds on top instead of coconut. It taste similar to a almond joy candy bar. ITS AMAZING!
What kind of pan do you use for this cake? Can I use two 8 inch rounds and stack it or will the cake fall apart? Thanks!
I have only used a 9x13 pan. The cake is slightly "gooey" and would fall apart if you used two 8 inch rounds.
